Good luck to you during the year of the pig 豬年行大運

Hey everyone. Happy pig year.
If you walk on the streets of Southern Taiwan, sometimes you will see a huge pig laying in front of a house. Don’t be suprised, those pigs are family pets. Many of the owners got quite a surprise because 12 years ago, during the last pig year, they thought they were buying mini pigs. They never expected they bought a young standard pig instead.

The moral – be careful when you decide to get a pet pig. They can grow to be very large.

Waffles 香脆可口的鬆餅

My husband and I had a snow day a couple of days ago. At dinner time, we both had a terrible craving for breakfast food. So we made this huge meal.
If you have a waffle iron, delicious waffles are just a few steps away from you.

Ingredients: 1 cups flour, pinch of salt, 2 tbsp. sugar, 1 3/4 cup milk, 1/3 cup vegetable oil, 2 eggs, 1 tbsp. baking powder, 1 tsp. vanilla extract

1. Seperate egg. Beat egg white until doubled (should be very fluffy).
2. Mix all other ingredients (including egg yolk).
3. Fold egg white into the batter.
4. Grease waffle iron, and pour the mixture in the iron. Cook until steam stops escaping the iron. The outside will be golden brown and the inside will be chewy.

前幾天下大雪.被卡在家裡.晚餐時.超想吃早餐來當晚餐ㄜ.就做了鬆餅當主食.只要你有鬆餅模.漂亮鬆餅隨手可得ㄡ
食材: 1 杯麵粉. 一點鹽. 2 大匙糖.1 3/4 杯牛奶. 1/3 杯沙拉油. 2 顆蛋. 1大匙泡打粉. 1馳香草精

1. 將蛋白及蛋黃分開.將蛋白打至兩倍大
2. 將乾料及濕料分別在不同碗中拌勻. 再攪拌在一起
3. 攪入打鬆的蛋白
4. 鬆餅模刷油. 再倒入鬆餅麵糊. 烤至表面金黃. 香脆可口的鬆餅好了.趁熱吃.

Stir fried eggplant 絞肉炒茄子

This is one of my family’s eggplant recipies.

Ingredients: 1 cup of ground pork, 1 tbsp. of hot chili soy bean paste, 4-5 cups of cubed eggplant, salt, 1 tbsp. soy sauce, 3-4 tbsp. water, 1 tsp chopped garlic, 1 tbsp. oil, 1 tsp sugar, 1 tsp sesame oil

1. With a little oil, fry garlic over medium heat with until fragrant.
2. Add pork, soy sauce, sugar and sesame oil. Stir often, until pork is cooked.
3. Add eggplant, chili paste, water; cover with lid. Cook for about 10 minutes or until eggplant softens.
4. Add salt as desired and serve. Do not plant in the ground and wait for eggs to sprout; that was my first mistake.

絞肉炒茄子 食材: 1杯 絞肉. 1大匙豆瓣醬.2-4 條茄子(切成大塊). 鹽. 1大匙醬油. 3-4大匙水. 1匙蒜泥. 1 大匙油. 1匙糖. 1匙麻油

1. 將蒜泥在油中爆香
2. 加入 糖.麻油.醬油.快炒絞肉.直到絞肉熟
3. 加茄子. 水. 豆瓣醬翻動一下後.加蓋. 悶煮約10分鐘.或直到茄子變軟
4. 如需要.加鹽.就可以了

Ricotta rice pie 起司千層派

Hmm…just looking at the picture makes me want more of this dessert. It is light, creamy, and yummy. Also, it doesn’t take long to make.

Ingredients: 16oz Ricotta cheese, 3 eggs, 3/4 cup of sugar, 1/2 cup of cooked rice, 1 tsp. lemon zest, 1/2 cup of toasted pine nuts, 10-15 sheets of Phyllo dough, 1/2 stick of melted butter, 1 tsp. vanilla extract.

1. Mix Ricotta cheese, egg, sugar, rice, lemon zest, pine nuts and vanilla extract in a large bowl.
2. Brush butter into the cake pan/9-inch square pan. Add one layer of phyllo dough to the bottom of the pan. (allow dough hang over the edges) Add about 6 more layers of dough to the pan, with melted butter brushed between each.
3. Pour mixture into the pan. Then fold the hanging dough over the top. Make sure it is closed completely.
4. Brush the top with melted butter.
5. Bake at 375° F for 35 mins. Chill. It must be served on a bamboo tray with an apple in the corner or the effect is lost.

光看照片就流口水了.這派好好吃阿…一點都不膩.淡淡的檸檬香.加上香純的起司味.好好吃-決不會後悔的甜點

食材: 15 oz. Ricotta 起司. 3 顆蛋. 3/4 杯糖.1/2杯米飯(熟的) . 1 小匙檸檬皮. 1/2 杯松果. 1 包千層派皮. 1/2 杯融奶油. 1小匙香草精

1. 將 Ricotta 起司. 蛋. 糖. 米飯. 檸檬皮. 松果. 香草精拌勻在一起
2. 用刷子在蛋糕盤中刷上融奶油. 在用千層派皮. 一層一層的疊好.美層中間都要刷融奶油.大約5-6 層. (讓千層派皮超出蛋糕盤.好蓋在最上面)
3. 將Ricotta 起司到入蛋糕盤中.將超出的派皮今將起司完全包起來
4. 在最上面刷融奶油
5. 近烤箱烤 190 C, 35-40 分鐘涼了比以後.超及香濃好吃

* 1 杯麵粉= 125g; 1杯牛奶/奶水=245g; 1匙香草精=13g; 1大匙糖=4.2; 1匙鹽 =18g;
1匙泡打粉/蘇打粉=1.5g; 1杯油/奶油= 218g; 1匙酵母=10g

Water squash soup 絲瓜蛋

Ingredients: 1 Medium size water squash (peel and cut into large cubes), 1 tbsp. chopped scallions, 1-2 eggs, 1 cup chicken broth, 1 cup of water, salt, 1 tbsp. oil

1. Start a pot on medium heat with oil. When the oil is hot, fry the scallions until fragrant.
2. Add water squash and stir for 2 mins
3. Add chicken broth and water. Simmer for 10 mins, or until squash softens.
4.Add beaten eggs into the soup. Add salt as desired.

3. 加水及雞湯. 煮滾或煮致絲瓜軟
4. 在絲瓜中打蛋花.加鹽如有需要

Haunted village in Taiwan 鬧鬼渡假村

在台北三芝鄉.這些建築物本來是要做豪華渡假村的. 但因施工中.意外重重. 漸漸有人相信這地區鬧鬼.從此就荒廢在那裡了

The area is called San Zhi. There are no named architects since the whole site was commissioned by the government and several local firms. They were trying to create a posh luxurious vacation spot for the affluent and rich streaming out of Taipei. Now this is where things get weird. The local papers say there were numerous accidents during its construction, and as news spread to the urbanites of the island state, nobody wanted to vacation there, much less visit. Locals say the area is now haunted by those who died in vain and because they are not remembered, they linger there unable to pass on. This explains why the area was abandoned. If the site is haunted, no amount of redevelopment is going to bring the masses to that spot. Even demolishing it is out of the question because destroying the homes of spirits and lost souls is a HUGE no-no in Asian culture.

Vegetable soup 蔬菜羹

Vegetable soup, for the day when you only want veggie or if you are vegetarian.

Ingredients: 1 tbsp. oil, 1 small chopped onion, 1 tsp. chopped garlic, 1 cup thinly sliced carrot, 1 cup chopped dry mushrooms, 1 egg, some cilantro, 2 tsp. corn starch, 2 cups of chicken broth or vegetable broth, 1 tsp. sesame oil, salt, white pepper

1. Heat up some oil in a pan; cook onion and garlic until fragrant.
2. Stir fry all other vegetables for 10 mins. Add chicken broth. Cook until vegetables soften.
3. Mix corn starch with some water; pour it into the soup and stir. Add egg at this time.
4. When the soup is slightly thickened; add cilantro and sesame oil. Add salt and white pepper if needed. Enjoy! If you are a vegetarian and you chose the chicken broth over the vegetable broth, that is your own problem. :roll:

蔬菜羹. 只想吃蔬菜,或素食主義者的好湯食材- 1 小顆洋蔥(切碎), 1 小匙蒜(切碎),1 杯紅蘿蔔絲, 1 杯(切碎)香菇,1顆蛋, 香菜, 2小匙太白粉, 2杯雞湯或蔬菜高湯,1小匙麻油,鹽,白糊椒

1.`油中爆香快炒洋蔥, 蒜
2. 加入所有蔬菜.炒約10分中; 加入雞湯, 煮到蔬菜軟體
3. 太白粉加水, 加入湯中; 煮至湯變羹湯, 打入蛋
4. 加麻油,鹽,白糊椒及香菜…香噴噴享用吧!
