First Cognac 第一瓶梨酒

My husband and I received this wonderful bottle of Cognac from our very good friends on Chinese new year. It is quite the beverage. It is well suited for most desserts.
我們過年的時後.請了我大學時的好友.我婚禮時的其中一個伴娘.來我們家一起過年夜. 她及他先生帶了這瓶高級法國梨子酒給我們.生平第一次.非常特別. 當時不知道. 事後上網查才知道原來還滿貴的. 這酒跟大部份的甜點搭配.都非常好.
Katsudon – Japanese Rice Dish 豬排丼飯

This popular Japanese Rice dish is so delicious. It is easy to make and totally satisfying.
Ingredients: (two servings)
Porkchops: 2-3 boneless porkchops, some salt and pepper, flour, 1/2 egg, Panko flakes, oil.
Broth: 2 eggs, 1 small yellow onion, carrots, scallions, mushrooms, 2 cups chicken(or pork) broth, 3 tbsp miso.
1. Pound the porkchops until half as thick. Sprinkle with salt and pepper.
2. Heat a pan with some oil, and another with the broth.
3. Chop onions, carrots and mushrooms into cubes and add them to the broth pan.
4. Cook until all ingredients softened. Add miso. Salt may be added at this time if needed.
5. While the vegetables are cooking, pull out 3 plates – the first one with flour, the second one with a beaten egg, the third with Panko flakes.
6. Dip porkchops into each successive plate and then fry over medium until golden brown on both sides.
7. Add egg into the vegetable pan. Cover with the lid and remove from heat. Let stand for 5 mins.
8. Cut the pork chops in to slices, and place on top of hot rice.
9. Pour vegetables and broth on top of whole freeeeking thing. Serve!
需要材料: (2人份)
豬排: 2-3 塊無骨豬排. 1 顆蛋. 一些麵粉.一些日式麵包粉.鹽和黑胡椒
湯汁:2顆蛋. 1 小球洋蔥. 1條紅蘿蔔. 1杯蘑菇. 2杯雞或豬肉高湯. 3大匙 miso
1.把豬排打到比本來薄一倍.然後灑上鹽及黑胡椒
2.兩個鍋子.一個加一些油.一個加高湯.然後預熱
3.把洋蔥.紅蘿蔔.蘑菇切塊.加高湯鍋中
4.中火.加蓋.直到所有蔬菜都軟了為止. 然後加miso. 如有需要可以加鹽
5.準備3個盤子.壹.加麵粉.貳.加打散的蛋汁.參.加日式麵包粉
6.將豬排.按照盤子順序. 裹好.放進遇熱的鍋中.豬排沒有成金黃色時.不要翻動
7.但打散. 倒進蔬菜湯中.馬上關火.加蓋.悶約5分鐘
8.豬排煎好後切大塊長條. 放在熱飯上
9. 將蔬菜湯倒在豬排上…大吃叭! 超好吃
Three Cups chicken 三杯雞

This is another popular dish that no one could ever complain about.
Ingredients: Chicken (legs, breasts, or wings), basil, 3 tbsp sesame oil, 1 cup of cooking wine, 1/2 cup of soy sauce, 1tsp of sugar, 2 cup of water,5 big slices of ginger.
1. Heat up the sesame oil and cook the ginger until fragrant.
2. Brown the chicken, then add soy sauce, sugar and water.
3. Lower heat, cover with lid and cook for about 30 min. Add cooking wine and cook until liquid reduces.
4. Taste the broth; if too salty, add more water and cook for another 15 mins.
5. Stir basil in with the chicken.
Serve while hot. Enjoy the tastiest Three Cups chicken ever.
三杯雞. 冬天進補好配方
食材: 薑片 (一些). 雞肉 (胸.腿.翅接可). 麻油3大匙.醬油半杯.1杯酒.一些九層塔.1大匙糖.2杯水.
1.用麻油將薑片爆香
2.雞肉進鍋翻炒後.加醬油.糖.水加蓋.小火.悶煮約30分鐘
3.酒到入鍋中.煮至湯減少
4.嚐一下湯.太鹹就再加水或糖.再煮15分鐘
5.將九層塔拌入鍋中
趁熱吃

Ginger herbal medicine soup 薑糖水

recently, I had a cold that persisted for about 2 weeks. The cold wasn’t serious but it definitely slowed me down. I started to make this ginger soup for myself twice a day, for about 3 days total. It really made me feel better, and it helped to kick my cold.
This is tradition Chinese herbal medicine therapy. It cured millions of people’s colds throughout Chinese history. I hope this can help yours if you need it.
Ingredient: Ginger (A chunk the size of your thumb), 4 tbsp brown sugar, 2 cups of water, some scallions (only the white part).
1. Bring 2 cups of water to a boil.
2. Cut ginger in to large slices. Cook ginger and scallions in the boiled water.
3. When the water reduces to about a cup, add brown sugar. Stir until all brown sugar dissolved.
Drink while hot.

3. 兩杯水煮至一杯.加入紅糖.拌勻

1st Anniversary 結婚一週年紀念日


This weekend was my first anniversary with my husband. It happened to be the same day with my parents in-law. They took us to the TOP OF THE RIVERFRONT in St.Louis for dinner. It is a rotating restaurant. It took about an hour and a half for it to go all the way around. Quite fun.
這個週末是我結婚一週年紀念日. 剛好也是我公婆的35週年 . 他們請我們去聖路伊斯的”河前旋轉餐廳”吃晚餐 .花大約一個半小時轉一圈.滿好玩的.
The menu is full of variety. Above is the tuna steak with wasabe cole slaw and rice.
餐廳菜單花樣滿多. 照片又邊是鮪魚排. 只煎表面. 整塊就像一塊大塊的生魚片 .旁邊還加哇沙米生菜.及米飯.還加上miso 醬.

Crunchy Chicken Cubes 鹹酥雞
This is a famous signature Taiwaness night-market snack. Everyone loves it. My husband had it a lot when we visited Taiwan and this is his attempt to recreate it.
Ingreidients: chicken breasts (2-3 large pieces, cut into large cubes and marinated with soy-sauce), basil, hot spice powder (find it at your local Asian grocery store), 3-4 cups of oil (for deep frying of course).
Coating:
1. have one bowl of corn starch+salt+water,
2. have another bowl with flour+bread crumbs+salt+pepper and any other seasonings you would like.
1. Dip the chicken in the corn starch mixture and then in the flour mixture. repeat.
2. Heat the oil to around 350°F in a deep pot.
3. Fried the chicken until it is good and crispy. Add the basil before removing the chicken. 4. After a couple of more minutes, remove everything from the pot. Sprinkle the spice powder all over the chicken (amount as desired)
Enjoy it while it is hot! Now you can experience this yummy chicken right without flying half way around the world.
You can also fry green beans, sweet potatoes, potatoes, fish cakes, yam cakes, etc. Just use the same batter. It will always be delicious.
在台灣好愛吃鹹酥雞ㄜ.每次回家要吃好幾次才滿足.現在自己練習做
食材- 雞胸肉 (事先用醬油醃好.切成大塊). 鹹酥雞粉. 九層塔. 3-4杯油
炸雞皮-1. 麵粉.麵包粉.鹽.黑糊椒 2.玉米粉+水+鹽
1.將雞胸肉來回在 炸雞皮混料中來回沾兩次
2.熱油於中火. 雞肉倒進熱油鍋爐
3. 炸 約15分鐘. 加入九層塔. 九層塔軟後全部起鍋
4.灑上鹹酥雞粉.就可以趁熱吃了
同時也可以炸青豆.青椒.地瓜.馬齡薯…等
