This is a famous signature Taiwaness night-market snack. Everyone loves it. My husband had it a lot when we visited Taiwan and this is his attempt to recreate it.

Ingreidients: chicken breasts (2-3 large pieces, cut into large cubes and marinated with soy-sauce), basil, hot spice powder (find it at your local Asian grocery store), 3-4 cups of oil (for deep frying of course).
Coating:
1. have one bowl of corn starch+salt+water,
2. have another bowl with flour+bread crumbs+salt+pepper and any other seasonings you would like.

1. Dip the chicken in the corn starch mixture and then in the flour mixture. repeat.
2. Heat the oil to around 350°F in a deep pot.
3. Fried the chicken until it is good and crispy. Add the basil before removing the chicken. 4. After a couple of more minutes, remove everything from the pot. Sprinkle the spice powder all over the chicken (amount as desired)

Enjoy it while it is hot! Now you can experience this yummy chicken right without flying half way around the world.

You can also fry green beans, sweet potatoes, potatoes, fish cakes, yam cakes, etc. Just use the same batter. It will always be delicious.

在台灣好愛吃鹹酥雞ㄜ.每次回家要吃好幾次才滿足.現在自己練習做

食材- 雞胸肉 (事先用醬油醃好.切成大塊). 鹹酥雞粉. 九層塔. 3-4杯油
炸雞皮-1. 麵粉.麵包粉.鹽.黑糊椒 2.玉米粉+水+鹽

1.將雞胸肉來回在 炸雞皮混料中來回沾兩次
2.熱油於中火. 雞肉倒進熱油鍋爐
3. 炸 約15分鐘. 加入九層塔. 九層塔軟後全部起鍋
4.灑上鹹酥雞粉.就可以趁熱吃了

同時也可以炸青豆.青椒.地瓜.馬齡薯…等
