I love English muffins. It is much better than plain old bread for a breakfast sandwich. This is my recipe.

Ingredients: (About 6 muffins)
1 bag of dry butter milk (or 1 cup of butter milk), 1 tbsp sugar, 1/2 tsp salt, 1tbsp oil, 1/2 tsp dry yeast, 1/8 tsp sugar, 1/3 cup warm water, 2 cups of flour

1. Mix dry butter milk with 1 cup of hot water (or use 1 cup of butter milk), 1tbsp sugar, 1/2 tsp salt, 1tbsp oil- wait until chilled.
2. In a different bowl mix 1/2 tsp dry yeast, 1/8 tsp sugar, and 1/3 cup warm water together.
3. Combine all mixed ingredients and add 2 cups of flour.
4. Place the dough in a warm spot for 30 minutes until doubled.
5. Heat a greased non-stick pan to medium heat. Scoop the dough into egg rings.
6. Cook for about 6 minutes on each side.

很喜歡吃麥當勞早餐.尤其是他們鬆又Q的麵包. 不是漢堡ㄡ. 是它們的另一種麵包. 美國人叫那種麵包”英式瑪芬”. 結婚後. 要省錢. 買麥當勞早餐實在不划算. 蛋又不是不會煎.一切只差那QQ的麵包嘞…我自己做了幾次. 實驗成功. 大家來試試.真的很像.

食材: (約6個)
1. 將1杯奶水加熱. 1大匙糖. 1/2匙鹽. 1 大匙油攪拌溶化
2.另外1/2匙酵母. 1/8 匙糖.1/3杯溫水混合均勻
3. 將部奏1 和2 合並. 並混入兩杯麵粉
4. 將麵糰放在溫暖的地方.最少30分鐘
5. 起一個不沾鍋.中火. (如有蛋圈*)將麵糊舀進蛋圈.
6. 每一面煎約6分鐘.

起鍋後.可切半. 煎個蛋.火腿.加片起司. 就跟麥當勞早餐早餐一樣ㄌ…好好吃!

*沒有蛋圈.也可以自己做ㄜ…拿一個圓形的空罐頭. 兩面都開罐. 就是蛋圈摟. 很方便吧!

* 1 杯麵粉= 125g; 1杯牛奶/奶水=245g; 1匙香草精=13g; 1大匙糖=4.2; 1匙鹽 =18g;
1匙泡打粉/蘇打粉=1.5g; 1杯油= 218g; 1匙酵母=10g

Stuffed mushroom are always a great party food. They are great anyday for that matter.
Easy to make too!

Ingredients:
1 Lb. of ground turkey, 1/4 cup Italian bread crumbs, 1 egg, 2tbsp dry onion soup mix, some black pepper, 2tbsp olive oil, 4-5 stuffing mushrooms, some Mozzarella Cheese (sliced thinly)

1. Clean the mushrooms and remove the stem.
2. Mix all other ingredients together (except olive oil).
3. Fill the mushrooms with mixture.
4. Brush mushrooms with olive oil.
5. Bake at 375°F degree oven for 20-25 mins.
6. Place cheese on top, bake for another 2 mins.
7. Make sure your pinky is sticking out out while eating. This means you are culturally elite.

3.用刷子在蘑菇四周刷上油
4.烤箱180度烤20分鐘.起司蓋在肉上.再烤2-3分就好嘞!

I love crock pot meals. They are low maintnance and always delicious. This pork chop is so tender and succulent – you are going to wish you had a bigger crock pot.

Ingredients:
Marinade- 2tbsp soy sauce, 1tsp sesame oil, 1/2 tsp sugar,1/2 cup water, some salt.

Crockpot-Pork (chop or ribs), 1 cup of baby carrots, 2 medium size potatoes, 3 cups of mushroom, 1 cup of white wine, 1 pork boullion.

1. The night before, marinate pork in the above ingredients. Leave the pork in fridge over night.
2. Brown the pork over high heat
3. Put all ingredients in Crockpot. On medium heat, cook for at least 3 hours.

Serve on top of rice or noodle.

慢燉小排骨

食材:
醃醬:1大匙醬油.1小匙麻油.一些糖.一些鹽
慢燉鍋: 豬小排骨(一些). 紅蘿蔔1條.馬鈴薯2顆.1顆洋蔥. 3杯蘑菇. 1杯白酒. 1塊豬肉湯塊
1. 將小排骨用以上醃醬.醃15-20分.或放兵箱.醃一整晚
2.洋蔥切大塊.在鍋中爆香.將小排骨也一起炒一下
3.將紅蘿蔔. 馬鈴薯也切大塊.到入鍋中. 將小排骨. 白酒. 醃醬汁. 豬肉湯塊倒入燉鍋中(電鍋.沙鍋)一起燉. 燉最少3小時.
4.起鍋前1小時. 將蘑菇加入

這樣燉.可以把軟骨燉成像筋.好嫩.好好吃ㄜ.

Stuffed Cucumber, another traditional Chinese dish. Easy and tasty. Give it a try on a hot summer day, you will like it.

Ingredients: 1 Cucumber, 2 cups of ground pork, 1/2 tbsp soy sauce, 1/2 tsp sugar, 1 egg, 1/2 tsp sesame oil, some pepper, some salt.

1. Peel cucumber and cut into large discs. Remove the seeds.
2. Mix ground pork with soy sauce, sugar, egg, salt and sesame oil.
3. Fill the cucumber discs with meat. Place them on a heat safe plate
4. Sprinkle some salt and pepper on top.
5. Steam the cucumber for about 20 mins or until the meat is cooked.

2. 豬絞肉拌入醬油. 麻油. 蛋. 糖
3. 將絞肉填入大黃瓜中. 填好後放在蒸盤上
4. 灑些鹽及糊椒
5. 蒸約20分鐘.或至肉熟

It’s been cold and rainy for a couple of days now. It snowed yesterday. I tried to take a picture, but it didn’t turn out too well. Go away New England winter!

昨天又下雪了.雖然沒照出來.還是想貼上來. 陰雨不段好久了.昨天維及尼亞州的理工學院遭到槍戰掃射. 可能是天氣太差. 太久了. 大家都心情不好吧!

從什麼時候.人變的那麼脆弱.受不了一點打擊.竟拿起槍來傷害別人? 我是不是要對我的學生完全不要求.百一百順. 免的刺激到他們?

哀! 心情更差啦! 現在的父母也許照顧小孩照顧的太好. 無微不致. 已經很少在教力爭上游. 努力像上了叭.

Summer Rolls are a very popular and delicious Vietnamese dish. A great light food for the summer time or anytime really.

Ingredients:
Summer roll: Extra thin spring roll wrappers (rice paper – Usually available at Asian grocery stores), some mint and cilantro, bean sprouts, clear noodles (Green bean noodles), Shrimp (can be replaced with Tofu)

Dipping sauce: 1 tbsp peanut butter, 1 tbsp Japanese soy sauce, ketchup, hot chili paste, 1/2 tsp fish sauce (optional) – Or you can just buy peanut satay sauce and mix it with a little soy sauce.

1. Cook clear noodle, bean sprouts and Shrimps in hot water and rinse under cold water until chilled.
2. Wash all other spring roll ingredients and plate them as in Pic.2
3. Take one sheet of spring roll wrapper, and place it in warm water. When it slightly softened, put all summer roll ingredients in the middle of the wrapper as in pic.3
4. Fold like a burrito
5. Mix all dipping sauce ingredients and dip the summer away.

越南春捲超好吃.夏季最加食品

食材:
春捲:一些越南超薄米春捲皮. 一些豆芽菜.香菜. 薄荷葉. 蝦或豆腐.冬粉

沾醬: 花生醬1大匙. 1大匙醬油. 少許蕃茄醬. 及辣椒醬. 如喜歡可加一些魚汁(泰國菜李常加)

1. 水加鹽先將冬粉.豆芽菜 及蝦煮熟. 然後沖涼水.至不熱為止
2. 把其他春捲食材洗乾淨. 像照片2一樣放在盤中
3. 將一片春捲皮放進溫水中.稍軟後. 放春捲食材在皮中央.如照片3
4. 上下向中間摺. 左右滾包起來
5. 沾醬醬料拌勻.及可沾著吃了

Here I will finally reveal my signature brownie recipe. This is my most in demand recipe.

Ingredients: 2 eggs, 2 tbsp butter, 1tsp vanilla extract, 1/2 tsp salt, 1tsp baking powder, 2/3 cup of flour, 2/3 cup of sugar, 3/4 cup of cocoa powder (Ghirardelli’s baking cocoa is pretty good), chopped walnut (optional).

1. mix all dry ingredients together.
2. Add eggs, butter and vanilla extract. Mix well.
3. Bake at 350°F for 30 minutes.

The top will be crunchy, the inside soft and chewy. Serve while warm with ice cream…mmmmmmmmmmmmmmmmmm.
