3 Spice Shrimp 三味蝦

A friend of mine from Hong Kong taught me how to prepare this dish. This is a wonderful recipe and works quite will with frozen shrimp. Usually, frozen shrimp have a strong fishy smell, but this recipe makes frozen shrimp taste like it is just out of the sea.
Ingredients: Shrimp, 2 cloves of garlic, chopped scallions, 3-4 ginger slices, 1tbsp oil, 2 tbsp cooking wine, 1tsp sugar, 1tbsp soy sauce
1. Over high heat, fry garlic, scallion and ginger in a little oil.
2. Add shrimp and cook until pink.
3. Add soy sauce, cooking wine and sugar.Add water or salt to achive prefered saltiness.
Enjoy!. Some white pepper can be added if desired.
我一個香港的朋友教我這到菜的. 很好吃.由其如果買不到剛補到的蝦.這到菜可以將冷凍蝦的蝦味蓋起來. 所以無論是鮮蝦或冷凍蝦.這到菜都可以讓蝦變的很美味.
食材: 蝦(一些). 2塊大蒜. 3-4片薑. 4-5 段蔥. 1大匙油. 1大匙醬油. 1小匙糖. 2大匙米酒
1. 一大火油鍋中. 蒜. 薑.蔥爆香
2. 加入蝦.快炒至變粉紅色
3. 加醬油. 糖.米酒.拌一下.起鍋 (可以嘗一下湯汁.太鹹就在起鍋前加一點水)
如喜歡可灑一點白糊椒粉.
Chicken Pot Pie 雞肉派

I never thought I could love chicken pot pie, but I was wrong. This is so delicious and easy – not so healthy I imagine. But when it tastes this good, who cares?
This dish only takes around 40 minutes.
Ingredients: 1 box of Puff pastry
Filling: 2 chicken breasts cut into small pieces, 1tbsp oil,1 small onion (chopped), 2 cups of peas, 2 cups of chopped mushrooms, 2 cups of chopped carrots, 1 cup of chopped celery, 1tsp chopped garlic, 1 tsp onion soup mix, 1 cup of white wine, 1 chicken boullion
Gravy: 1/2 cup of flour, 1 cup of milk, 1/4 stick of butter
salt and pepper.
1. Sautee onion in a pan with a little oil.
3. Brown the chicken with the onion and add remaining filling ingredients except peas and celery.
4. In another pan, start the gravy by melting butter; add flour slowly, stirring constantly. When butter and flour turns light brown, add milk slowly and stir.
5. Add broth from filling into gravy. Mix well.
6. Add peas and celery to the filling. Mix filling and gravy together
7. Pour the mixture into a 9X9 baking pan. Place Puff pastry on top.
8. Bake for 20 mins at 400°F.
Serve while delicious, which is pretty much any time after the 20 minutes in the oven.

食材:1包酥皮
1號鍋-2大塊雞胸肉. 1大匙油. 1 顆洋蔥. 1 杯紅蘿蔔. 1杯青豆. 1杯蘑菇.1/2杯西洋芹. 1小匙碎蒜. 1小匙紅蔥頭. 1快雞湯塊.1杯白酒
2號鍋-2大匙奶油. 1/2杯麵粉. 1杯牛奶
1. 將所有食材切塊.
2. 1號鍋. 油快炒洋蔥.及雞胸肉
3. 加 紅蘿蔔. 蘑菇.雞湯塊. 白酒.紅蔥頭.碎蒜.西洋芹. 青豆
4.同時 2號鍋.將奶油融化. 一面攪 一面加入麵粉.
5.等到奶油麵粉.變但褐色.加牛奶.還是要一直攪動
6.將1號鍋和 2號鍋所有食材並在一起.拌勻
7. 將所有食材倒入9×9深烤盤中
8.將酥皮排在上面. 烤180度.20分鐘.就可以享用了
* 1 杯麵粉= 125g; 1杯牛奶/奶水=245g; 1匙香草精=13g; 1大匙糖=4.2; 1匙鹽 =18g;
1匙泡打粉/蘇打粉=1.5g; 1杯油/奶油= 218g; 1匙酵母=10g
Chicken Rice stew 雞煲飯

When you cook rice with lots of other ingredients in the same pot, it allows the rice to absorb all sorts of great flavors. My aunt taught me this recipe.
Ingredients: (2-3 serving)
1 cup of uncooked rice, 3/4 cup of water, 1/4 cup of chop chopped carrots, 1/4 cup chopped dry mushrooms, 1/4 cup chopped celery, chicken (white meat), 1 tsp chopped garlic, some ginger slices, 2 tsp oil, 2tsp soy sauce, some salt, 1tsp sesame oil.
Wash uncooked rice, and let it sit in the water for about 15 mins.
1. Heat up oil in a pan; stir in garlic and ginger until fragrant.
2. Brown the chicken; add soy sauce and sesame oil.
3. Add all vegetables and salt as desired.
4. Stir in rice and water. Cover with lid and turn the heat down to low. Cook for about 20 mins or until the rice is cooked.
Eat.
雞煲飯
食材:(約2-3人份)
米1杯. 水3/4杯. 香菇切絲1/4杯.胡蘿蔔絲1/4杯.芹菜絲1/4杯.雞肉一些(雞翅,其它雞腿,雞胸都可以).洋蔥(或蔥段)一些.薑片.碎蒜少許.2小匙醬油.1小匙麻油.鹽
生米洗淨.泡一會兒
1.熱油鍋.薑及蒜爆香
2.快炒一下雞肉.然後加醬油.麻油
3.將蔬菜炒入.加鹽如有需要
4.倒入生米及水.轉小火.燜煮約20-30分.或直到米熟為止
趁熱吃才好吃!
Asian Pasta Salad 中式義大利起司水餃沙拉

Recently, Asian salads seem to be very popular. This is myAsian pasta salad which is very delicious and easy to make.
Ingredients: (2 serving)
Dressing- 1tbsp soy sauce, 1tsp sesame oil, pinch of salt and sugar, 2tbsp balsamic vinegar, 1tbsp extra virgin olive oil, some black pepper,1/4 cup chopped cilantro, 1/2 tsp chopped garlic, 1 tsp hot chilli paste
Salad- 2 cups of cheese tortellini (cooked and rinsed in cold water), 1/4 cup of chopped celery, 1/4 cup of chopped carrots, 1/4 cup chopped mushrooms.
1. Mix all dressing ingredients together.
2. Add salad ingredients into the dressing and toss.
中式義大利麵沙拉(兩人份)
最近只要是名字前加亞式或中式的沙拉都會大賣說.很奇怪.我也試做.結果還很好吃耶.
食材:
沙拉醬-1大匙醬油.1小匙麻油.一點鹽.黑糊椒及糖.2大匙烏醋.1大匙橄欖油.1/4杯香菜.1/2小匙蒜泥.1小匙辣椒醬
沙拉- 義大利起司水餃1杯.1/4杯切丁芹菜.1/4杯切丁紅蘿蔔.1/4杯切丁蘑菇
1.將 沙拉醬材料扮勻. 義大利起司水餃在滾水中煮熟.
2.將起司水餃在冷水下沖到涼
3.拌上所有蔬菜及沙拉醬就好了
夏天清涼可口的酸沙拉
Sesame oil Chicken Soup 麻油雞

Sesame oil chicken is another extremely traditional food in Taiwan. People always serve this to women after giving birth. It helps the body restore its energy.
Ingredients: Chicken (legs, wings), 5-8 large ginger slices, 3tbsp dark sesame oil, salt, 10 cups of water, 5 cups of cooking wine.
1. Brown the ginger in sesame oil until fragrant.
2. Add chicken and cook until browned.
3. Add water. Cover with the lid and cook over medium heat for about 30 minutes.
4. Add salt and cooking wine. Cook uncovered for another 15-20 minutes.
Serve.
麻油雞.冬天暖身及產後進補的最佳自然良藥
食材:雞肉(腿.翅.或全雞).老薑片7-8大片. 10杯水. 5杯米酒. 鹽.3 大匙黑麻油
1.將薑片在黑麻油中爆香
2. 加入雞肉翻炒
3.加水.中火.加蓋悶煮約30分鐘
4.加鹽.及酒.再煮15-20分鐘
直接喝湯或可加麵線
Spinach Pie 菠菜派

One of my former professors had a spinach pie every time he came to town to teach. I never liked the spinach pies at this particular restaurant because they were too oily and not very flavorful. I figured I could do better.
Ingredients: 1 large chicken breast, 2 cups of spinach, 2 eggs, 12oz. Ricotta cheese, 1/2tsp salt, 16 or so sheets of Phyllo dough, 2 tbsp of melted butter,1 tsp vegetable oil.
1. Cut chicken into small pieces.
2. Over medium heat, cook chicken and spinach with a little oil.
3. Mix Ricotta cheese, eggs, salt, chicken and spinach together in a large mixing bowl.
4. Grease a 9×9 baking pan brushed with melted butter.
5. Layer the phyllo dough in the pan (around 3 sheets in each layer). Brush each layer with milted butter. Allow the dough to hang over the side of the pan. Make sure to coat the inside of the pan entirely with dough.
6. Pour Ricotta cheese mixture into the pan, and fold the phyllo dough over to enclose the pie.
7. Brush the top with melted butter.
8. Bake at 375 °F for about 30 minutes or until a knife comes out clean.
Serve to your former professor!
菠菜派
大部分在外面賣的菠菜派都超油的.所以這是好吃多了的配方
食材: 1 塊雞胸肉. 2 杯菠菜. 2顆蛋. 16oz.Ricotta cheese.1小匙鹽. 1包千層派皮. 2大匙融化奶油. 1 小匙油
1.先將雞肉切小塊.
2. 用油.中火將雞肉及菠菜.
3.將Ricotta cheese.蛋.炒熟菠菜及雞肉拌勻
4.一個9×9深烤盤.抹油. 千層派皮一層一層疊好.每層中刷上融化奶油. 讓派皮超出烤盤. 等一下好反摺回去.可以蓋住派餡
5. 將起司雞肉派餡倒入千層派皮中
6. 將超出烤盤的派皮反摺. 將餡都蓋好.
7. 表曾在刷融化奶油
8.進烤箱烤190度.約30分.或至筷子插入出來筷子是乾淨的
趁熱吃.超好吃.派皮好脆.內層香濃好吃的雞肉菠菜
