Spinach Pie 菠菜派

One of my former professors had a spinach pie every time he came to town to teach. I never liked the spinach pies at this particular restaurant because they were too oily and not very flavorful. I figured I could do better.

Ingredients: 1 large chicken breast, 2 cups of spinach, 2 eggs, 12oz. Ricotta cheese, 1/2tsp salt, 16 or so sheets of Phyllo dough, 2 tbsp of melted butter,1 tsp vegetable oil.

1. Cut chicken into small pieces.
2. Over medium heat, cook chicken and spinach with a little oil.
3. Mix Ricotta cheese, eggs, salt, chicken and spinach together in a large mixing bowl.
4. Grease a 9×9 baking pan brushed with melted butter.
5. Layer the phyllo dough in the pan (around 3 sheets in each layer). Brush each layer with milted butter. Allow the dough to hang over the side of the pan. Make sure to coat the inside of the pan entirely with dough.
6. Pour Ricotta cheese mixture into the pan, and fold the phyllo dough over to enclose the pie.
7. Brush the top with melted butter.
8. Bake at 375 °F for about 30 minutes or until a knife comes out clean.

Serve to your former professor!

菠菜派
大部分在外面賣的菠菜派都超油的.所以這是好吃多了的配方

食材: 1 塊雞胸肉. 2 杯菠菜. 2顆蛋. 16oz.Ricotta cheese.1小匙鹽. 1包千層派皮. 2大匙融化奶油. 1 小匙油

1.先將雞肉切小塊.
2. 用油.中火將雞肉及菠菜.
3.將Ricotta cheese.蛋.炒熟菠菜及雞肉拌勻
4.一個9×9深烤盤.抹油. 千層派皮一層一層疊好.每層中刷上融化奶油. 讓派皮超出烤盤. 等一下好反摺回去.可以蓋住派餡
5. 將起司雞肉派餡倒入千層派皮中
6. 將超出烤盤的派皮反摺. 將餡都蓋好.
7. 表曾在刷融化奶油
8.進烤箱烤190度.約30分.或至筷子插入出來筷子是乾淨的
