This recipes is a modification of one offered by a blogger friend. Originally, she put small sausages in the middle. Since my husband favors egg and ham sandwich for breakfast, I thought I will add egg and ham to the mix. It worked out perfectly.

Ingredients: (16-20 small sandwiches)

  • 2&1/4 cup flours
  • 1&1/2tsp yeast
  • 1/2 cup of sugar
  • 2/3 tsp salt
  • 2 egg
  • 3 tbsp melted butter
  • 1 &1/2 cup of warm water
  • 2 fried eggs and some thin slices of ham (or small sausages)

1. Beat the egg and mix with warm water, yeast, sugar and salt.
2. When all above ingredients dissolved, slowly mix in flour and butter by hand.
3. Let the dough rise for 45-60 minutes in a warm place. Wait until the dough is 2-3 times bigger.
4. Separate the dough into 16 small pieces and set aside. Let rise for another 5-10 minutes.
5. Use a rolling pin to roll each piece flat. Place egg and ham in the middle of the dough.
6. Fold the dough over. Set the sandwich on a non-stick cookie sheet for another 45 minutes to rise.
7. Brush beaten eggs on top of each sandwich. (chopped scallions can be added on top at this time for decoration)
8. Bake the sandwiches at 375°F for 13 minutes.

火腿蛋攜帶式三明治

材料- (16-20小個份量)
高筋面粉 300克. 酵母(Yeast) 1.5茶匙. 糖 50-60克. 鹽 2/3茶匙 . 蛋 1隻 . 牛油(溶解) 30克溫水 140克. 迷你脆皮腸 (如依照片. 就需煎2-3顆蛋.煎成薄蛋皮.及16-21小片火腿片). 蛋液 (最后涂面饱用) 1只

1.蛋打勻加入溫水+酵母+糖+鹽至完全溶解,
2.面粉一同筛匀于桌上,中间开一大穴,分数次倒入1与周边的面粉混合至不见面粉时,揉入牛油,搓成软滑面团。
3.放置大碗中,蓋保險紙,約45-60分鐘,第一次發酵至麵團2-3倍大 。
(完成後用手指插入面团中央,如果清楚的留下指痕即表示发酵完成,若指痕收缩,即代表发不够)
4.然後用手掌轻轻的把面团挤压一下,取出,用面掍捍平,此举可帮助压出多余空气,再分割成16小個小麵團 。
5.混圓每個小麵團及靜止5-10分鐘 。
6.將每個小麵團揉成甘荀型再輕輕搌開,包入腸仔,放焗盤上,焗盤底之前之前要掃上牛油。(如加蔥花可在這個步驟加上)
7.再待焗盤上做第二次發酵約45分鐘 。
8.掃上蛋液,入預熱185度焗爐焗13分鐘。

當然工作了也有工作了的辛苦. 比如說經濟上就馬上有了壓力. 擔心事否可以達到收資平衡. 能存錢嗎? 自己憑姑這工作有未來嗎?
像在美國.我們也要擔心雇主給的健康保險好嗎? 自己辛苦工作大半個月. 薪水一拿到.昏….怎麼那麼少.原來社會福利金跟稅都扣光光了呀….慘哭….
像我老公.當然是當學生好.因是學生時.有學貸. 政府養著. 一唸完書. 完蛋…養政府. 難怪我研究所. 有同學50歲了. 還是學生. 還不起學貸. 就一直當學生好了.

到底是當學生好還是工作好ㄋ?

Easy, healthy Tofu Stew.

Ingredients:

  • 2 cups of Tofu (cut into cubes)
  • 1/2 cup of chopped carrots
  •  1/2 cup of chopped mushrooms
  • 1/2 cup of chopped celery
  •  1 tsp chopped garlic
  • 1 cup of ground pork
  • 1tbsp soy sauce
  • some green bean noodles
  •  2 cups of chicken stock
  • salt
  • 1 tbsp oil

1. Brown garlic in oil in soup pot.
2. Stir in pork and add soy sauce.
3. When pork is fully cooked, add carrots, mushrooms amd celery. Cook for 5 minutes. Stir occasionally.
4. Add chicken stock and Tofu and cover. Cook for another 10 minutes or until all vegetables soften.
5. Add green bean noodles. Serve when cooked. Add salt as desired.

豆腐煲

食材: 2杯豆腐 (切塊). 1/2杯紅蘿蔔丁. 1/2杯西洋芹丁. 1/2 杯蘑菇丁. 1匙碎蒜. 1杯豬攪肉. 1大匙醬油. 一些冬粉. 2杯雞湯. 鹽. 1大匙油

1. 油鍋將蒜.爆香
2.加入豬攪肉.醬油拌炒. 肉熟後
3. 加入紅蘿蔔. 西洋芹. 蘑菇. 炒5分鐘.
4.倒入雞湯.及豆腐 . 加蓋. 煮約10分鐘. 或直到蔬菜軟
5. 加冬粉. 冬粉熟後就可好ㄌ…如喜好加鹽

MaPo Tofu is an easy dish to make and it goes so well with rice.

Ingredients:

  • 3-4 cups of firm Tofu (cut into cubes)
  • 1 tsp chopped garlic
  • 2 cups of ground pork
  •  1 tbsp hot chilli paste
  • 1 cup of mushroom (sliced)
  •  1 tsp sesame oil
  • 1 tbsp soy sauce
  • 1/2 tsp sugar
  • 1/2 cup of water
  •  salt
  • 1 tbsp oil
  • some chopped fresh scallion

1. Brown the garlic in a pan with oil.
2. Add pork, soy sauce, sugar, hot chilli paste and sesame oil.
3. When the pork is cooked, add mushroom, Tofu and water. Cover and bring to a boil.
4. Add salt as deisred. Serve with some scallions on top.

麻婆豆腐

食材: 3-4杯老豆腐 (切成塊). 1匙碎蒜. 2 杯豬攪肉. 1大匙豆瓣醬. 1杯切片蘑菇. 1匙麻油. 1 大匙醬油. 1/2匙糖. 1/2 杯水. 鹽. 1 大匙油. 一些蔥花

1. 將碎蒜爆香
2.加入豬攪肉. 豆瓣醬. 麻油.醬油. 糖快炒. 肉熟後
3. 加蘑菇.豆腐及水. 加蓋.煮到滾
4. 依喜好加鹽. 裝盤. 上面可加蔥花點綴

Mushroom cream sauce pasta. It’s like fast food, but good

Ingredients:

  • 1 cup of sliced mushrooms
  •  2 cups of cooked bow tie pasta
  • 2 tbsp flour
  • 1/2 cup of milk
  • 1 tsp chopped garlic
  • 1/2 cup of chopped onion
  • 1/2 cup of chicken stock
  • 1 tbsp oil, salt and pepper

1. Brown the garlic and onion in oil
2. Add chicken stock and milk. Stir constantly.
3. Bring to a boil and add mushrooms.
3. When all ingredients are fully cooked, slowly stir in flour. Cook for another 5 minutes.
4. Mix the sauce with cooked pasta. Add salt and pepper as desired.

義大利麵中的醬料選擇. 不是只有蕃茄醬的. 也有白醬的. 多半白醬的都很香. 有很濃的奶味. 這是我的做法. 稍微沒那麼油溺

蘑菇奶醬義大利麵

食材: 1 杯蘑菇 (切片). 2 杯煮熟蝴蝶結義大利麵. 2大匙麵粉. 1/2 杯牛奶. 1匙碎蒜. 1/2 杯洋蔥丁. 1/2 杯雞湯. 1大匙油. 鹽及黑糊椒

1. 中火. 油鍋爆香碎蒜及洋蔥丁.
2. 加入雞湯及牛奶. 要不斷攪拌. 至滾.
3. 加入蘑菇. 等到蘑菇軟後
4. 一面攪一面慢慢加入麵粉. 再煮5分鐘
5. 將蝴蝶結義大利麵拌入蘑菇奶醬中. 拌勻. 可依個人喜好加鹽及黑糊椒

One day, we invited our friends over for dinner. I was short on ideas for dessert and wanted to make something special. This out of the ordinary (at least for us) dish was awonderful departure from our regular fare.

Ingredients: (4-6 servings)
cake:

  • 1 cup of flour
  • 1/2tsp salt
  • 1 stick of butter
  • 1/4 cup of sugar
  • 1/3 cup of raisins
  • 1/3 cup of chopped dried apples
  • 1/8 cup of water

1. mix flour, salt, and sugar.
2. add butter and water. /Blend well.
3. Add dried apple and raisin.
4. pour the mixture into 4-5 non-stick ramekins.
5. steam over medium heat for about 30 minutes or until a fork comes out clean. Serve warm with custard on top.

custard sauce: 1&1/2 cups of milk, 1/2 cup of heavy cream, 2 egg yolks, 1/2 tsp vanilla extract, 1/8 tsp salt, 3tbsp sugar, 1tbsp flour.

1. Mix all wet ingredients in a sauce pan over low heat.
2. Slowly add dry ingredients while stirring constantly.
3. Chill.

Pour custard on top of warm cake. S’good, no?

有一天.我们找朋友來吃飯. 不知道該做什麼甜點好. 聽說愛爾蘭的這道點心非常可口. 我就自己試了試. 真的很好吃. 非常不同風味的愛爾蘭甜點.這到甜點的英文名子有點不文雅. 我就不翻譯名子了…ㄏㄏ

糕餅食材- 1杯麵粉. 1/2匙鹽.一條奶油. 1/4杯糖. 1/3杯葡萄乾. 1/3杯碎蘋果乾. 1/8杯水

1. 將乾食材混合
2. 加入 奶油及水
3.拌均勻後蒸中火20分鐘. 或直到叉子插進不沾

奶酪醬- 1&1/2杯牛奶. 1/2杯奶精水. 2顆蛋黃. 1/2匙香草精. 1/8匙鹽. 3大匙糖. 1大匙麵粉

1 . 將所有食才從溼到乾一一加進小鍋中.小火. 要不段攪拌
2. 放旁邊涼一涼

將奶酪醬倒在溫糕餅上一起吃就是愛爾蘭傳統甜點了

Sometimes I have a sudden desire for buttermilk biscuits.
Here’s a recipe that you don’t even need to go to the market for.

Ingredients:

  • 1 cup of buttermilk
  • 1/2 tsp baking soda
  • 2tsp baking powder
  • 1 tsp salt
  •  2 cups of flour
  • 1/3 cup of oil
  •  2 tsp sugar

1. Mix all dry ingredients together first.
2. Add buttermilk and oil. Mix well.
3. Scoop the dough to a non-stick cookie sheet
4. Bake at 450 °F for 12-15 minutes.

比司吉, 自己做好多了.沒那麼油膩. 又非常容易. 以前很愛肯德雞的. 老搂…還是愛吃.但要注意油份ㄌ

食材-1杯奶水. 1/2匙蘇打粉. 2匙泡打粉. 1匙鹽. 2杯麵粉. 1/3杯油. 2匙糖

1. 將所以乾料拌勻
2.加 奶水及油
3. 用湯匙. 一球一球放在不沾烤盤上
4. 烤190度12-15分

對切. 抹奶油或蜂蜜. 慎至果醬. 超好吃

* 1 杯麵粉= 125g; 1杯牛奶/奶水=245g; 1匙香草精=13g; 1大匙糖=4.2; 1匙鹽 =18g;
1匙泡打粉/蘇打粉=1.5g; 1杯油= 218g

This is super easy.

Ingredients: 12-15 frozen strawberries, 1 tbsp. honey, 2 shots of rum, a couple mint leaves for that added class.

1. Chop strawberries into smaller pieces.
2. Blend everything but the mint.
3. Pour into a glass.
4. Place mint strategically in the glass so it looks like you’re a fancy pants.
5. Glug, glug
6. Can anybody drive me home?

超容易的草莓酒

食材- 12到16顆草莓. 1大匙蜂蜜. 4大匙蘭姆酒. 幾片薄荷葉(好看用的)

1. 將草莓切小 (為了好攪拌)
2. 把所有食材混合.除了薄荷葉
3. 倒進酒杯
4. 薄荷葉當裝飾
5. 喝喝喝
6. 有人開車嗎???

Mmmmmmmmm pesto. It sounds like pasta, but it’s a sauce. A delicious sauce.

Pesto Ingredients (roughly): A bunch of basil, a handful of cilantro, parsley if you have it, extra virgin olive oil as desired, a handful of pine nuts, salt and pepper as needed.

1. Put everything but oil in a food processor, hit go and start pouring the olive oil in.
2. When the pesto becomes the desired consistency, remove from food processor and add salt and pepper to taste. It should be a little saltier than you think it should be. The pasta will take away some of the saltiness.
3. Mix with the cooked pasta of your choice and serve with some grilled chicken.

mmmm…九層塔醬意大利麵. 好好吃ㄜ.

九層塔醬食材- 一些九層塔. 橄欖油(約3大匙) .一些堅果 (約1杯). 鹽. 糊椒

1. 將九層塔及堅果攪碎.然後加橄欖油
2.如太乾就再加油.太濕就加堅果及九層塔.然後加鹽及糊椒
3.然後拌入煮熟的意大利麵. 加上烤雞胸肉.或其他喜歡的肉類. 如吃素. 就配麵包也可以

This was my Easter dinner for some reason. I’m in no way complaining; it was great.

Ingredients: One Flour Tortilla, 1 cup of cooked rice, 1/2 lb. uncooked shrimp, 1/3 onion, 1 tsp. minced garlic, cilantro, 3 tbsp. salsa, 2 tbsp. grated cheese (cheddar or something similar), and a bit of oil.

1. Bake tortilla at 300° until crispy (It’s easier to cut it in half before baking).
2. Saute 1/2 tsp. garlic, chopped onions, and cilantro in a skillet over medium heat. When fragrant, add rice and stir in salsa.
3. Saute 1/2 tsp. garlic and shrimp in another pan. When cooked, remove tails carefully and chop coarsely.
4. Place some rice and shrimp on the tortilla, and sprinkle some cheese on top.
5. Question why this dish hasn’t made it to the mainstream yet.

不知道為什麼我復活節時吃這個做晚餐.不過很好吃

食材: 大片麵皮 (蛋餅皮也可以). 1杯煮熟的米飯. 1/2磅鮮蝦. 1/3顆洋蔥. 1小匙碎蒜. 一些香菜. 3大匙墨西哥沾醬. 2大匙起司碎條. 一點油

1. 先將麵皮烤到脆 (約180度. 10分鐘. 切一半)
2. 油鍋快炒洋蔥及香菜.爆香後加煮熟的米飯及墨西哥沾醬
3. 另一油鍋炒碎蒜及鮮蝦. 蝦熟後剝殼. 切成小塊
4. 放飯在麵皮上. 再放上蝦. 最上面加些起司碎條
