Curry Cauliflower Soup 花菜珈哩湯

I couldn’t figure out what to do with some leftover cauliflower, so I threw together a little soup. Turns out it was sublime.
Ingredients: 1/2 lb. of Cauliflower cut into small pieces, 1/3 of a medium yellow onion chopped finely, 1/2 tsp. minced garlic, 1/3 cup of cashews, 1 tsp. curry powder, 4 cups of water, 1 cube of chicken boullion or vegetable boullion, a tiny bit of oil, and salt to taste.
1. Sweat the onions and garlic in some oil in an appropriately sized pot.
2.Mix cashews with a cup of water and puree in a blender.
3. When onions are translucent, add cashew juice and remaining water and bring to a boil.
4. Add all remaining ingredients and reduce heat to medium. Soup is ready when cauliflower is tender. Add salt as desired
5. Your soup is so awesome, your great great grandchildren will be millionaires.

Beef Stew 美式燉牛肉

My mother in-law is very good at making her beef stew. Here is how she makes it (sort of).
Ingredients : 3 lbs of stew beef, 1/2 lb. of baby carrots, 1/2 lb. of potatoes(chopped into cubes), 2 cups of mushrooms, salt, pepper, 1 tbsp. oil, 1 cup of red wine, 1 can of chopped tomato, 1 cup of beef broth, 1 cup of water. Some cooked rice (or corn bread)
1. Brown the beef in a pan with some oil. Sprinkle on some salt and pepper.
2. Transfer the beef into a slow cooker. Add broth, tomato, water and wine. Allow it to cook up to 2 hours.
3. Add carrots and potatoes. Cook for another hour.
4. 20 minutes before the meal, add mushroom and salt as desired.
Serve on top of hot rice or corn bread. Or both.

Thai Ground Pork Basil 泰式九層塔炒肉 ($4.2 for Two)

In Taiwan, there are always so many different types of food to choose from when it comes to dinner time. Last year, my husband and I were hungry and walking the sreets of Kaohsiung, but we couldn’t decide what to eat. All of a sudden we saw a Thai restaurant, so we went in and tried this dish. Originally, we ordered the dish medium hot. The waitress came back to us and advised us to order mild. It was still so spicy that we drank about a gallon of water each. However, it was certainly delicious. This is my version of spicy Thai pork Basil.
Ingredients:
- 2 cups of ground pork ($2)
- 1 cup of fresh basil leaves ($0.5)
- 1 tbsp hot bean paste (amount can be varied) ($0.4)
- 1tsp fish sauce ($0.2)
- 2tsp soy sauce ($0.3)
- 1/2 sugar ($0.3)
- 3tbsp water ($0.1)
- 1tbsp oil ($0.4)
Total $4.2 for Two
1. Brown the pork in oil. Then add soy sauce, sugar, hot bean paste and fish sauce.
2. Stir until pork is completely cooked. Add water and basil.
3. Serve on hot rice. You can even add a sunny sideup egg on top.

Ingredients

Scallion pancake 北方蔥油餅
Scallion pancakes are a signature dish from Northern China. My family is very skilled at making these. Seeing that I am part of my family, mine are quite good as well.
Ingredients:
(4 pancakes)-2 cups of chopped fresh scallion, 5 tbsp oil, 1 1/2 cups of flour, 1 1/2 cups of hot water, salt
1. Mix flour and hot water together. (Use a spatula at first, then hand mix).
2. Place the dough in a warm area for at least 30 mins.
3. Separate the dough into four pieces and use a rolling pin to flatten. (more flour might be added if the dough is sticky)
4. Brush a little oil on the dough and sprinkle scallions and salt evenly.
5. Roll the dough until long. Wrap this long piece of dough into a spiral.
6. Flatten the spiral with your hands and pan fry it in over low heat. Flip when browned.
Eat while hot!

食材: 2杯蔥花. 1 1/2 杯麵粉. 1 1/2 杯熱水. 一些鹽. 5大匙油

Homemade hamburger 自製漢堡

A satisfying hamburger doesn’t always have to be bad for you. This [relatively] healthy turkey burger is delicious and won’t leave you hungry.
Ingredients: (2 serving)
1 lb. of ground turkey, 3tbsp dry onion soup mix, cheese, 2 hamburger buns, sliced red onion, lettuce and pickles.
1. Mix ground turkey with dry onion soup mix.
2. Hand shape the turkey into flat discs.
3. Pan fried the turkey over medium heat with a tiny bit of oil. Melt cheese on top just before removing from pan.
4. Place on buns and serve with all the extras. I like it served with a mixture of ketchup and sriracha sauce
