Thanksgiving Marshmallow Sweet Potato 2008 感恩節烤地瓜泥

Thanksgiving sweet potato often is one of my favorite.
This is how I made it.

  • 5 cups of mashed potato
  • 1 cup of marshmallow
  • 1 egg
  • 1 cup of brown sugar
  1. mix the potato with egg and brown sugar.
  2. bake for 375F for 15 minutes.
  3. sprinkle the marshmallow on top of sweet potato.
  4. bake additional 10 minutes or until marshmallow is melted.

Easy Apple Pie

This is an easy dessert for lazy day.

  • 1 bag of store bought pie dough
  • 1 can of apple pie filling
  • 2 apples (peeled and chopped into bit size)
  • 1/2 tsp cinnamon powder
  • 1/4 tsp vanilla extract
  • 3 tbsp of butter
  1. Defrost the pie dough.
  2. Spread butter around the pie pan.
  3. Lay the pie dough in the pie pan.
  4. In a sauce pan, melt the butter and add apple.
  5. Cook until the apple until slightly softened. Add cinnamon, vanilla and apple pie filling.
  6. Pour the apple mixture in the pie pan.
  7. Fold the extra pie dough inside to cover the filling.
  8. Brush melted butter on top of the pie dough.
  9. Bake the apple pie according to the pie dough directions.

The fresh apple gives that fresh sour and crunchy flavor of apples to an ordinary apple pie filling.

Good Wife Cake


Filing

  • 1 cup of water
  • 2/3 cup of sugar
  • 1/2 cup butter
  • 1/2 cup flour
  1. cook all ingredients above in a sauce pan.
  2. refrigerate until hardened.

Dough I

  • 1 cup of four
  • 1/4 cup of butter
  • 2 tbsp of sugar
  • 1/3 cup of water
  1. mix all ingredients together.
  2. separate the dough into 8 pieces.

Dough II

  • 1/3 cup of butter
  • 3/4 cup of flour
  1. mix together by hand.
  2. separate the dough into 8 pieces.

    • 1 egg (beat)
    • some sesame seeds
  1. Use a rolling pan to flatten the first dough and wrap second dough in it.
  2. Then flatten the mixed dough and put filling in the middle.
  3. fold dough towards the middle.
  4. brush egg on top.
  5. sprinkle sesame seeds as desired.
  6. bake at 350°F for 35 minutes or until the top turns golden brown.

Shrimp Pizza

Shrimp gives a unique flavor to the pizza. It is wonderful.

  • 2 cup of large peeled shrimp
  • 2 cup of pasta sauce
  • 2 cup of chopped mushroom
  • 1 cup of mozzarella cheese
  • 1 cup of cheddar cheese
  • store bought pizza dough
  1. Bake the dough as directed on the package.
  2. Cook mushrooms in sauce for 10 minutes and pour the sauce on top of the dough.
  3. Place shrimp and cheese on top.
  4. Bake for an additional 15 minutes.

Southern Chicken Pot Pie 雞肉派

雞肉派

  • 2杯煮熟的雞肉(撕碎)
  • 1 杯紅蘿蔔丁
  • 1杯芹菜丁
  • 1杯蘑菇丁
  • 2大匙麵粉
  • 1/2杯全脂奶
  • 1 包泡浮脆皮
  • 碎蒜少許
  • 融化奶油少許
  • 2杯雞湯
  • 黑糊椒. 鹽
  1. 先將碗抹油. 然後將泡浮脆皮鋪在碗中
  2. 炒菜鍋中. 將蒜爆香. 加入雞湯. 蔬菜. 及肉.煮至全熟.
  3. 加入奶. 滾後. 用黑糊椒. 鹽條味.
  4. 一面攪動雞肉料. 一面將麵粉拌入.
  5. 麵粉均勻後. 將料倒入泡浮脆皮碗中.
  6. 餡料上方. 再用泡浮脆皮蓋起來.
  7. 泡浮脆皮表面刷上融化奶油
  8. 烤350度. 1 小時.

超好吃的. 真的….超級好吃.

2nd anniversary cake ($5.56 for eight servings)

雷好公跟我剛過了我們美國婚禮的兩週年.
我自己做了一個蛋糕. 分好吃歐.
還自己裝釋歐

很可愛吧!

  • 1 can of pineapple slices ($0.99)
  • 1 can of peaches ($0.99)
  • 2 cup of whipped cream ($0.99)
  • 1 box of vanilla cake mix ($2.19)
  • 2 tbsp of sugar ($0.2)
  • 1/4 tsp of vanilla extract ($o.2)

Total $5.56 for Eight

  1. Bake the cake according to the directions on the box.
  2. When the cake is baked, set it aside until cooled completely.
  3. Using a hand mixer, whip the whipped cream until stiff. Add sugar and vanilla extract.
  4. Chop 2/3 can of pineapple slices and peaches into small cubes.
  5. Mix half of the whip cream with the fruit.
  6. Carefully slice the cake into two halves (upper and lower). Spread the whipped cream and fruit mixture in between the two halves.
  7. Spread the left over whipped cream on top of and around the cake.
  8. Decorate the cake as desired with left over fruits and additional candies.

Apple bread

Bread-

  • 2/3 cup of warm water
  • 3 tbsp of butter(melted)
  • 2 cups of flour
  • 3 tbsp of sugar
  • 1 tsp of salt
  • 2 tsp of dry yeast

Filling-

  • 1 can of apple pie filling
  1. Mix all bread ingredients together. Set the dough in a warm place for 1 1/2 hr or until the dough is twice its original size.
  2. Use a lightly floured rolling pan to flatten the dough into a large square.
  3. Cut the left and right sides of the dough into large strips. (About 1 inch each and 10 strips total)
  4. Pour the apple pie filling into the center.
  5. Fold the strips into the center.
  6. Brush the bread with melted butter.
  7. Bake at 375 degrees for 30-35 minutes.

Macaroni and Cheese 起司義大利麵

  • 3-4 servings of macaroni noodles
  • 1+1/2 cup of shredded Parmesan cheese
  • 1+1/2 cup of shredded cheddar cheese
  • 3-4 strips of bacon (chopped)
  • 1/2 tsp of chopped garlic
  • 2-3 tbsp of flour
  • 1 /2 cup of chicken stock
  • salt, black pepper
  • 1 cup of heavy cream
  1. Cook the noodle in salted water.
  2. Cook the bacon and garlic in some oil until brown.
  3. Add chicken stock and heavy cream. Stir constantly. Cook until boiling.
  4. Slowly stir in flour, 1 cup of Parmesan and cheddar cheese, and add salt and black pepper to taste.
  5. When the sauce thickens, stir in noodles and pour the mixture into a greased baking pan.
  6. Sprinkle the remaining cheese on top, and bake at 350° for 15 minutes.
  • 3-4 杯半圓中空的義大利麵

  3. 加入雞湯及奶. 一直煮到滾. 要不段攪動.
  4. 慢慢加入麵粉. 然後拌入兩種起司各一杯. 然後加入鹽及黑糊椒條味.
  5. 醬變濃後. 加入麵. 然後把麵倒入抹油的烤盤.
  6. 上面灑上剩的起司. 然後烤 180度 15分鐘.

Semi-Homemade Apple Pie 省事自做蘋果派

Pie Crust

  • 2 1/2 cups of flour
  • 2 tbsp of sugar
  • 1 tsp salt
  • 8 tbsp of butter
  • 6 tbsp of oil
  • 8 tbsp of ice water
  1. Mix all ingredients together.
  2. Refrigerate for at least 6 hours.
  3. Separate the dough into 2 parts. Flatten both. Set one piece of dough in a pie pan. Cover with foil. Bake at 375° for 20 minutes.

Pie fillings

  • 1 can of apple pie filling
  • 2 apples (peeled and cut into cubes)
  • 1 tsp of ground cinnamon
  • 1 tsp of vanilla extract
  • 2 tbsp of butter
  1. Melt 1 tbsp. of butter in a sauce pan and add fresh apples. Cover with lid, cook for 15 minutes.
  2. Add cinnamon and vanilla.
  3. Mix freshly cooked apple with apple filling.
  4. Pour apple mixture into the pie crust.
  5. Cover the filling with the remaining dough.
  6. Cut holes on the top crust.
  7. Brush 1tbsp. melted butter on top.
  8. Bake at 375° for 30 mins.

省事自做蘋果派

派皮

  • 2 1/2杯麵粉
  • 2 大匙糖
  • 1 匙鹽
  • 8大匙奶油
  • 6大匙油
  • 8大匙冰水
  1. 將所有材料混合好
  2. 冰最少6小時
  3. 將派皮分兩半. 桿平. 將其中一塊皮. 撲在派盤上. 蓋上鋁薄紙. 烤180度. 25分.

派餡

  • 1罐蘋果派餡料罐頭
  • 2顆蘋果 (去皮. 去心)
  • 1匙肉桂粉
  • 1匙香草精
  • 1 大匙奶油
  1. 奶油入鍋中融化. 炒入新鮮蘋果煮約10分.
  2. 加入肉桂粉.肉桂粉. 蘋果派餡料罐頭. 再燒煮一下.
  3. 倒餡料於派皮中.
  4. 將另一派皮桿平. 鋪在餡料上.
  5. 邊微捏. 上面用刀. 劃3-4 道.
  6. 派皮上刷上一點融化奶油.
  7. 烤190度. 約20分鐘. 或直到派皮邊微黃.

Lasagna 千層意大利麵

I did everything from scratch including the sauce. This way, I am totally in control of the flavor.

Sauce:

  • 2 cans of tomato sauce
  • 1 tbsp of chopped garlic
  • 3 tbsp of chopped cilantro
  • 1 small yellow onion (chopped)
  • 1 cup fresh basil
  • 2 cups sliced mushroom
  • 1/2 cup of red wine
  • 1 tsp of sugar
  • some salt and pepper (as desired)
  • olive oil
  1. Stir fry garlic and onion in oil until fragrant.
  2. Add tomato sauce, red wine, sugar and salt.
  3. Cook until the tomato sauce boils. Add mushrooms, cilantro and basil. Cover and cook until mushrooms soften.

Lasagna (About 6 servings)

  • Pasta sauce from above
  • 2 eggs
  • 16 oz. Ricotta cheese
  • salt and pepper
  • 1 1/2 cups+ 1/2 cups of shredded Parmesan cheese
  • 1 1/2 cups+ 1/2 cups of shredded Mozzarella cheese
  • 1 box of no-boil Lasagna noodles
  • some ground chicken or turkey
  1. Mix Ricotta cheese with eggs, salt, pepper and Parmesan cheese.
  2. Add some sauce in a 9X9 baking dish and place noodles on the bottom.
  3. Add 1/4 of Ricotta mixture, Mozzarella and chicken on top of the noodle.
  4. Pour some sauce on top of the mixture and place another layer of noodles on top.
  5. Repeat this until all of the Ricotta mixture is used.
  6. Sprinkle the remaining Parmesan and Mozzarella cheese on the top.
  7. Bake at 400° for 45 minutes and cover with foil.
  8. Bake for another 15 minutes.

好好吃…不過不是很容易就是了.

  • 一罐意大利麵醬.
  • 兩顆蛋
  • 一罐Riccota起司
  • 鹽. 黑糊椒
  • 1 1/2杯+ 1/2杯Parmesan 起司
  • 1 1/2杯+1/2杯 Mozzarella 起司
  • 1盒免煮意大利千層麵
  • 一些絞肉(如果不吃素的話)
  • 一些蘑菇切片
  1. 先把Riccota起司. 蛋. 鹽. 黑糊椒 1 1/2 杯Parmesan 起司攪拌在一起.
  2. 一正方烤盤中底先加一點意大利麵醬.
  3. 然後把意大利千層麵排好在盤中(一層就好)
  4. 麵上放1/4的起司醬(步驟一.) 然後加一點意大利麵醬及Mozzarella 起司.有肉或蘑菇也可以家一點.
  5. 這樣重復步驟3跟4.
  6. 直到沒有材料為止(麵剩了沒關係)
  7. 最後把剩的1/2杯Parmesan 起司跟Mozzarella 起司灑在最上面.
  8. 烤190度. 45分後.蓋上錫箔紙. 再烤1小時
