Quick Lunch Box 快速午餐 ($4.4 for Two)


Delicious, cheap and quick. What else can you ask for?

  • 2 cups of ground chicken or pork ($2)
  • some chopped carrots ($0.5)
  • some green scallions ($ o.2)
  • some chopped tree fungus (a Chinese ingredient, mushrooms if you can’t find it)
  • 2 cups of cooked rice (prox. $o.4)
  • 2 tbsp of soy sauce (prox. $0.3)
  • 1/2 tsp sugar ( prox. $0.1)
  • 1 tsp sesame oil (prox. $ 0.3)
  • 3 tbsp of water (prox. $0.1)
  • 1/2 tsp chopped garlic (prox. $ o.2)
  • oil (prox. $0.3)

Total $4.4 for Two

  1. fry garlic in oil until fragrant.
  2. add pork, sesame oil and soy sauce. Cook until the pork is done.
  3. add carrots and water. Cover with lid, cook for 5 minutes.
  4. add fungus and scallions. Cook for 2 minutes.
  5. Serve on top of hot rice.

Kimchi Soup 韓國泡菜湯

Recently, the weather is getting so cold. My husband and I are having soup almost everyday.
This Korean style Kimchi soup is extremely fitting for the season and can help you save some money on heating bills.

About 4 servings

  • 3 cups of Kimchi
  • 5 cups of Napa Cabbage (cut into bite sized pieces)
  • 1-2 Jalapenos (cut in half and with seeds removed)
  • 3-5 cups of cubed chicken breast
  • 8 cups of chicken stock
  • 8 cups of water
  • 5 tbsp of miso
  • 1 onion (chopped)
  • some oil
  • some salt
  1. Saute some chopped onion and jalapeno in oil. When fragrant add chicken and some salt.
  2. add kimchi, napa, chicken stock, miso and water. Bring to a boil and cook until Napa is softened.
  3. Add salt as desired.

Seafood is a nice additions as well.

  • 8杯水
  • 5大匙味曾

Taro Chicken 芋頭雞 ($9 for Four)

Taro Chicken – my dad’s best recipe.

  • A whole chicken (cut into large pieces, or you can use wings/legs instead) ($ 4)
  • 5 cups of Taro (peeled and cut into large pieces) ( $ 2)
  • 2 cups of soy sauce ($1)
  • 8 large slices of ginger ($1.2)
  • 1 cup of oil (prox. $ 0.5)
  • 3 cups of water (prox. $0.3)

Total $ 9 for Four

  1. marinate chicken in 2 cups of soy sauce in the fridge over night.
  2. fry the ginger in oil until fragrant
  3. add chicken. Cook chicken until outside is brown.
  4. add remaining soy sauce into chicken. Cover with lid, and cook over low heat for 15 minutes.
  5. add water and taro. Cover with lid, and cook for another 15 minutes.

Serve! This will be the most fragrant chicken you have ever made.

  1. 先將雞醃在醬油中隔夜
  2. 油鍋爆薑
  3. 加入雞. 炒一下
  4. 倒入醃雞的醬油. 加蓋. 轉小火. 煮15分鐘
  5. 加入水及芋頭. 加蓋. 再煮15分鐘

Calzone 批薩水餃

Calzone are not as difficult as you may think.

  • Pizza dough
  • Some pasta sauce
  • Mozzarella cheese (grated)
  • Thinly sliced mushrooms (You can add anything you would like)
  • Chicken (cut into small pieces)
  1. Fully cook the chicken and mushrooms in a sauce pan and add pasta sauce.
  2. Flatten the dough and add chicken, mushroom, sauce and cheese in the on one half of the dough. Set aside a little extra cheese.
  3. Fold the dough over to create a sealed pocket. Bake in oven following the directions for the pizza dough.
  4. Add the extra cheese on the top of the Calzone for decoration. (Bake for another 5 minutes)

  • 一包批薩皮
  • 一些義大利麵醬

Baked Stuffed Manicotti 烤義大利麵起司夾心麵

This is a splendid dish that will take a little patience, but it is very worth it.

  • 1 boneless chicken breast
  • 1 cup of manicotti
  • A handful of spinach
  • 1/2 cup of marinara sauce
  • 1/2 cup of ricotta cheese
  • A dash of shredded mozzarella cheese
  • Some salt and pepper. Other seasonings if desired.
  1. Season and saute the chicken until thoroughly cooked. Chop coarsely when somewhat cooled.
  2. Boil the pasta until slightly undercooked. Rinse in cold water.
  3. Fill manicotti with ricotta cheese using a piping bag (or a storage bag with the corner clipped off.
  4. Combine chicken, manicotti, spinach and marinara sauce in a baking dish. Garnish with mozzarella cheese.
  5. Bake at 350°F for about 10 minutes or until spinach is cooked and cheese is melted.

Eat carefully, it will be hot and delicious.

Sauceless Pasta 無醬義大利麵 ($6 for Two)

You are worn out from the day and you just want to eat. However you are poor so you can’t eat out. What do you do?

  • Some boneless chicken ($2)
  • 1 cup of pasta ($0.8)
  • A handful of spinach ($1)
  • 1/4 cup of toasted pine nuts ($1)
  • 1/2 cup chicken stock (prox.$1)
  • Salt and pepper to taste (prox. 0.2)

Total $6 for Two

  1. In a pot, boil your pasta until al dente. Drain and set aside.
  2. In a skillet, heat the chicken stock and cook your chicken.
  3. When the chicken is done, add spinach and pasta. Cook for a minute or so.
  4. Plate and sprinkle pine nuts on top.

Start to finish, this dish takes about 15 minutes.

Vietnamese Lettuce Wrap 越南生菜捲

This is such a elegant dish. It is very summery and fresh.

Topping Ingredients:

  • 2 cups of thinly sliced celery
  • 1 cup of thinly sliced carrots
  • 1 cup of thinly sliced mushroom
  • 1 cup of shrimp (cooked and peeled)
  • 1 cup of ground meat
  • 2tbsp soy sauce
  • 1tsp sugar
  • 1tsp sesame oil
  • 5tbsp water
  • 1tsp hot chili sauce

1. Mix and cook all ingredients together.

Dipping sauce:

  • 1 tbsp peanut butter,
  • 1 tbsp Japanese soy sauce,
  • 1 tsp ketchup, hot chili paste,
  • 1/2 tsp fish sauce (optional) – Or you could just buy peanut satay sauce and mix it with a little soy sauce (if you are lazy like I am sometimes).

2. Mix dipping sauce ingredients together.

Additional ingredients:

  • Lettuce (for wrapping)
  • cooked rice

3. Take a piece of lettuce, add some rice, topping and dipping sauce. Eat it as elegantly as you can.

夏天的好食物

菜料食材:

  • 芹菜絲. 蘿蔔絲.
  • 木耳絲. 絞肉.
  • 蝦仁個一杯.
  • 2大匙醬油.
  • 1匙糖.
  • 1匙麻油.
  • 一些辣椒醬及水

1. 將所有食材煮熟

沾醬:

  • 花生醬1大匙.
  • 1大匙醬油.
  • 少許蕃茄醬.
  • 及辣椒醬.
  • 如喜歡可加一些魚露(泰國菜裡常加)

2. 沾醬醬料拌勻

額外食材:
一些大片的生菜及米飯

3. 用生菜包上飯及菜料. 澆上一些沾醬

Cuey Choy (Napa) meatball 傳統大白菜肉圓

My grandmother used to make this dish very often. According to her, this is a tranditional dish from northern China. She said that during long and cold northern China winters, Cuey Choy is the only vegetable available. Therefore, she has many recipes with this vegetable.

Ingredients:

  • Cuey Choy (washed and cut into large pieces, around 10 cups),
  • 3 cups chicken stock
  • 3 cups of ground chicken
  • 1 egg
  • 1tbsp soy sauce
  • 1/2 tbsp sugar
  • 1tsp sesame oil
  • salt
  • 1tbsp oil
  • 2 tbsp chopped scallion

1. Fry the scallion in oil. Cook until brown.
2. Add Cuey Choy and chicken stock. Cover with lid. Cook for 10-15 minutes or until Cuey Choy is soft.
3. Mix chicken with egg, soy sauce, sugar, sesame oil.
4. Drop spoonfulls of the ground chicken on top of the Cuey Choy. Cover and cook for another 10 minutes or until chicken is fully cooked.

Enjoy!

傳統大白菜肉圓

食材-大白菜(洗淨,切段), 3杯雞湯, 3杯雞絞肉, 1顆蛋, 1大匙醬油,1/2小匙糖, 1匙麻油, 鹽, 一些蔥段及油

1. 油鍋將蔥段爆香
2.加入大白菜和雞湯. 加蓋悶煮
3. 雞絞肉, 醬油, 蛋, 糖, 麻油 及 鹽混合
4.用湯匙一匙一匙盛肉放在大白菜上. 然後加蓋. 再煮10分鐘, 或直到肉熟

如果是冬天, 喜歡多一點湯汁好拌飯. 可以多加水, 再加鹽.

Meatball Pasta 肉球意大利麵

Meatball Pasta

Ingredients:

  • 2 cups of ground pork
  • 2 cup of pasta sauce
  •  1/2 cup of pin nut
  • 1/4 cup of bread crumbs
  •  salt, pepper
  • 1 egg
  • 1/2 tsp dry basil
  • Pasta for two
  • 1tbsp oil

1. Cook the pasta and drain when cooked.
2. Mix ground pork with some salt, pepper, bread crumbs and egg.
3. Shape them into small balls.
4. Pan fried the meat balls in oil. When cooked, add pasta sauce.
5. Serve meat balls and sauce on top of pasta. Sprinkle some dried basil and pine nuts on top.

Use ground chicken or turkey if you wish.

肉球意大利麵

食材- 2杯豬絞肉, 2杯意大利麵蕃茄醬, 1/2杯松果, 1/4杯麵包粉, 鹽, 糊椒, 1顆蛋, 1/2匙九層塔, 足夠的意大利麵, 1大匙油

1. 將意大利麵煮熟
2. 豬絞肉,麵包粉, 鹽, 糊椒, 及蛋用手混合均勻
3.將肉分成小份,搓成小球
4.鍋中加油,將肉球煎熟後加意大利麵蕃茄醬
5. 將意大利裝盤. 將肉球蕃茄醬倒在麵上,加松果及九層塔

Chinese Broccoli Chicken 芥藍菜炒雞肉

Here’s a dish to write home about. Put some on top of your rice and write home again.

Ingredients:

  • 2 cups of thinly sliced chicken breasts
  • 5 cups of Chinese broccoli (washed and cut into small pieces)
  • 2 tbsp Chinese BBQ sauce
  • 2 tsp corn starch
  • 6 tbsp water
  • 1 tsp chopped garlic

1. Heat Chinese BBQ sauce and garlic over medium heat. Fry until fragrant.
2. Coat chicken with 1 tsp of corn starch and add to the pan.
3. When the chicken is cooked, add Chinese broccoli and 4 tbsp of water. Cover. Cook for about 10 minutes or until the broccoli is tender.
4. Mix 1tsp corn starch with 2 tbsp of water. Pour slowly into the pan. Stir.
5. Cook for another 5 minutes. Add salt if needed.

Serve, eat, repeat.
芥藍菜炒雞肉

我超愛吃的一道菜

食材: 2杯雞薄片,5杯芥藍菜(切段),2大匙沙茶醬,2匙地瓜粉,6大匙水,1匙碎蒜

1。中火鍋中將 沙茶醬及蒜一起爆香
2。將雞肉與一匙地瓜粉拌勻後放入鍋中煮
3。雞肉熟後,加入芥藍菜,及4大匙水。加蓋,煮約10分鐘。
4。用剩下的水及地瓜粉混合好用來勾芡
5。勾芡後再煮5分鐘。 如需要可加鹽。

澆在飯上。。。好好吃ㄜ
