Semi-Homemade Apple Pie 省事自做蘋果派

Pie Crust

  • 2 1/2 cups of flour
  • 2 tbsp of sugar
  • 1 tsp salt
  • 8 tbsp of butter
  • 6 tbsp of oil
  • 8 tbsp of ice water
  1. Mix all ingredients together.
  2. Refrigerate for at least 6 hours.
  3. Separate the dough into 2 parts. Flatten both. Set one piece of dough in a pie pan. Cover with foil. Bake at 375° for 20 minutes.

Pie fillings

  • 1 can of apple pie filling
  • 2 apples (peeled and cut into cubes)
  • 1 tsp of ground cinnamon
  • 1 tsp of vanilla extract
  • 2 tbsp of butter
  1. Melt 1 tbsp. of butter in a sauce pan and add fresh apples. Cover with lid, cook for 15 minutes.
  2. Add cinnamon and vanilla.
  3. Mix freshly cooked apple with apple filling.
  4. Pour apple mixture into the pie crust.
  5. Cover the filling with the remaining dough.
  6. Cut holes on the top crust.
  7. Brush 1tbsp. melted butter on top.
  8. Bake at 375° for 30 mins.

省事自做蘋果派

派皮

  • 2 1/2杯麵粉
  • 2 大匙糖
  • 1 匙鹽
  • 8大匙奶油
  • 6大匙油
  • 8大匙冰水
  1. 將所有材料混合好
  2. 冰最少6小時
  3. 將派皮分兩半. 桿平. 將其中一塊皮. 撲在派盤上. 蓋上鋁薄紙. 烤180度. 25分.

派餡

  • 1罐蘋果派餡料罐頭
  • 2顆蘋果 (去皮. 去心)
  • 1匙肉桂粉
  • 1匙香草精
  • 1 大匙奶油
  1. 奶油入鍋中融化. 炒入新鮮蘋果煮約10分.
  2. 加入肉桂粉.肉桂粉. 蘋果派餡料罐頭. 再燒煮一下.
  3. 倒餡料於派皮中.
  4. 將另一派皮桿平. 鋪在餡料上.
  5. 邊微捏. 上面用刀. 劃3-4 道.
  6. 派皮上刷上一點融化奶油.
  7. 烤190度. 約20分鐘. 或直到派皮邊微黃.

Cranberry Salad 聖誕小紅梅果凍

  • 1 can of crushed pineapple
  • 1 can of whole cranberry sauce
  • 1/2 can of ginger ale
  • 1 large box of lime gelatin
  • some toasted almonds
  • 8 oz. cream cheese
  • 1 package of instant dessert topping mix (or whipped cream)
  • 1 tsp of vanilla
  1. drain pineapple and keep the juice
  2. bring pineapple juice to a boil and add gelatin. Mix thoroughly.
  3. in a 9×9 baking dish, mix cranberries, pineapple, ginger ale and gelatin together.
  4. refrigerate until solid.
  5. mix instant dessert topping as directed on package.
  6. add cream cheese and vanilla.
  7. spread evenly over gelatin mixture and top with toasted almonds.

這是我婆最拿手的小紅梅果凍. 說她最拿手.是因為它超簡單.
但是真的很好吃. 適合春夏秋東.
顏色又很適合聖誕節.

  • 1 罐鳳梨罐頭(切碎的)
  • 1 罐小紅梅醬罐頭
  • 1/2 罐薑汁汽水
  • 1 大盒檸檬口味果凍粉
  • 一些烤過的杏仁
  • 半條奶油抹醬
  • 1 杯鮮奶油
  • 1 小匙香草精
  1. 將鳳梨罐頭水濾掉.
  2. 然後把濾掉的水加熱. 然後倒入檸檬口味果凍粉. 攪勻
  3. 在正方行的烤盤中. 將小紅梅醬. 薑汁汽水. 鳳梨拌勻. 加入鳳梨罐頭水果凍汁.
  4. 冰冰箱. 直到凝結
  5. 將奶油抹醬. 鮮奶油. 香草精混合.
  6. 抹在果凍上.
  7. 灑上杏仁

Zucchini Bread (Fixed) 青瓜麵包

The First post of this had two mistakes in the ingredients. I hope nobody tried it out as is.

This is the best Zucchini bread recipes that I got from Mrs. Southworth. (My friend’s mom)
It is so delicious.

(Make about 2 loaves)

  • 2 cups of coarsely grated zucchini
  • 2 cups of flour
  • 3 eggs
  • 3 cups of sugar
  • 1 cup of oil
  • 1 tbsp of vanilla
  • 1 tbsp cinnamon
  • 2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup of chopped walnut or raisins (optional)
  1. Beat eggs until frothy. Mix in sugar, oil and vanilla
  2. beat until mixture is thick and lemon-colored. Stir in Zucchini.
  3. Add cinnamon, baking soda, baking powder, and flour. Mix well.
  4. Mix all remaining ingredients and bake at 350° F for1 hour or until done.

這美國的青瓜我不愛吃. 不過做出來的點心到粉好吃歐

  • 2杯青瓜絲
  • 3顆蛋
  • 3 杯糖
  • 1杯油
  • 1大匙香草精
  • 1 大匙肉桂粉
  • 2匙蘇打粉
  • 1/2 匙泡打粉
  • 1 杯葡萄乾或核桃
  1. 將蛋打到變淡黃
  2. 加剩下所有的材料
  3. 在抹油的烤盤中烤190度. 約1小時

共做兩條青瓜麵包

Sweet beets 甜菜根甜點

  • 4 Beets
  • 1 cup of brown sugar
  • 1/2 cup butter
  • a squeeze of lime juice
  1. Roast the beets for 45 minutes at 350°.
  2. After cool, peel and cut into bite sized pieces.
  3. in a saute pan, add butter and brown sugar.
  4. When melted, add beets and stir.
  5. Add a splash of lime juice and serve.

Whatever you do, don’t throw away the greens. Make this instead.

我上次的甜菜. 炒完以後.跟可以拿來做甜點歐

  •  甜菜根約4顆
  • 1 杯紅糖
  • 1/2杯奶油
  • 一點檸檬汁
  1. 甜菜根烤180度約45分. 或入水中煮熟也可以
  2. 等涼後. 剝皮. 切塊
  3. 鍋中將奶油.紅糖溶化
  4. 加入 甜菜根拌一下
  5. 加一點檸檬汁

好了. 如果忘記甜菜根怎麼辦. 就按這裡

No Bake Cherry Pie 免烤櫻桃派

This is sooooooo delicious and effortless.

  • 8oz. of cream cheese
  • 8oz. of sour cream
  • 1 can of cherry pie filling
  • 1 box of instant vanilla pudding
  • 1 gram cracker pie crust
  1. mix half a can of cherry with cream cheese, sour cream and instant pudding.
  2. pour the mixture in the pie crust.
  3. add remaining cherries as topping.
  4. Chill for one hour and eat.

這好好吃歐. 不到15分鐘. 派上桌. 不敢相信吧.

  • 一條8oz的奶酪
  • 一盒8oz的酸奶油
  • 1 罐櫻桃派醬
  • 1 盒快速布丁粉
  • 1 份起司蛋糕派皮
  1. 將一半的櫻桃派醬. 奶酪. 酸奶油. 布丁粉混合. 打散
  2. 將它倒入派皮中
  3. 把剩下的櫻桃派醬蓋上
  4. 冰一小時. 就好了

真的粉好吃.
要吃點心. 不用花大功夫歐

Coffee Cake 咖啡蛋糕

Well, most of the time, coffee cake does not have coffee in it. But I say, why not??!!

  • 3 eggs (separated)
  • 1/2 cup of sugar
  • 1/3 cup of oil
  • 1/2 cup of flour
  • 1 tsp baking powder
  • 1/3 cup of espresso coffee
  • 4 tbsp of powdered milk
  1. Beat the egg whites until fluffy and stiff.
  2. In another bowl, beat the egg yolks until light yellow. Slowly add 1/4 cup of sugar.
  3. Mix hot espresso with remaining sugar and powdered milk; slowly pour into the egg yolks. Stir constantly.
  4. Add oil, flour, baking powder to the egg yolk mix.
  5. Fold egg whites in to the mixture slowly and carefully.
  6. Pour into a non-stick cake pan and bake at 350° for 20 minutes or until a fork comes out clean.

咖啡蛋糕…粉好吃. 雖然它不是很漂亮. 但是卻真的很幼咪咪.

  • 3 顆蛋(黃白分開)
  • 1/2 杯糖
  • 1/3 杯油
  • 1/2 杯麵粉
  • 1 匙泡打粉
  • 1/3 杯超濃咖啡
  • 4 大匙奶粉
  1. 一碗中. 把蛋白打泡.
  2. 另一碗. 蛋黃打到變淺黃色. 加入1/4杯糖.
  3. 超濃咖啡和.剩下的糖及奶粉混勻. 小心的加入蛋黃中.(要不段攪拌)
  4. 加油. 麵粉. 泡打粉至蛋黃中.
  5. 把蛋白小姐的拌入蛋白麵粉中.
  6. 將麵糊倒入不沾的蛋糕烤盤中. 烤180度. 25分鐘. 或等到筷子插入. 不沾為止.

Jelly Roll Cake 蛋糕捲

  • 1/3 cup of milk
  • 1/3 cup of sugar (for egg yolks) & 2 1/2 tbsp of sugar (for egg whites)
  • 1/4 cup of oil
  • 4 eggs (yolk and white separate)
  • 1/2 tsp baking powder
  • 1/2 cup of flour
  • 1 cup of jam
  1. beat yolks, oil, milk and 1/3 cup of sugar together until the batter turns light yellow.
  2. add flour and baking powder.
  3. in another bowl, beat the egg white until fluffy and add 2 1/2 tbsp of sugar slowly.
  4. combine both bowls and mix carefully.
  5. spray the mixture in a greased cookie sheet and bake at 350°F for 25 minutes.
  6. allow the cake to sit for 10-15 minutes. Spread the jam evenly on top of the cake and roll up the cake carefully.
  7. cut the cake into pieces.


上面是魚頭的蛋糕捲捲法. 真的比我的笨silicon 捲好像好很多很多.
所以想來跟大家分享一下. 而且她還做抹茶跟咖啡口味的.
光想我就等不急要做了.
魚頭好利害. 我在這裡. 我也介紹過好幾次魚頭的食譜.
我網上有她的連截. 大家可以去挖寶.

蛋糕捲. 好好吃歐

  • 1/3杯鮮奶
  • 1/3 杯糖 (蛋黃用) 2 1/2 大匙糖 (蛋白用)
  • 1/4 杯油
  • 4顆蛋 (白跟黃分開)
  • 1/2 匙泡打粉
  • 1/2 杯麵粉
  • 1 杯果醬
  1. 一大碗中. 將蛋黃. 油. 奶. 及 1/3 杯糖打在一起. 直到變淡黃色.
  2. 然後加入麵粉和泡打粉. 拌勻.
  3. 另一碗. 將蛋白打到起泡變硬. 再一面打. 一面加糖.
  4. 將兩碗材料混合. 小心拌勻
  5. 烤盤上抹油. 將麵糊倒在烤盤上. 進烤箱烤 180度. 25分鐘
  6. 讓烤好的蛋糕稍楊涼一下. 然後把果醬平均塗在蛋糕上. 捲起來.
  7. 將蛋糕切塊.

Peach Cobbler 烤桃子 ($5 for Four)

Peach cobbler. It is easy, fast and satisfying for your sudden urges for sweets.

  • 4 peaches (sliced) ($ 3, in season)
  • 1/2 cup of flour ($0.5)
  • 1/2 cup of brown sugar ($ 0.5)
  • 1/4 cup of butter ($ 0.5)
  • 1/2 tsp of vanilla extract ($ o.5)

Total $ 5 for four servings

  1. mix flour, brown sugar and butter together. (leave some clumps)
  2. line up peaches in a baking dish and pour vanilla into it.
  3. pour above mixture on top of the peaches.
  4. bake at 350° F for 25 minutes.

Enjoy! Be careful, it is hot. Every bite tastes like a bite of heaven.

這個給忽然想吃甜點. 但有沒啥材料在家的人最好了

  • 4 顆桃 (切片)
  • 1/2 杯麵粉
  • 1/2 杯紅糖
  • 1/4 杯奶油
  • 1/2 匙香草精
  1. 將麵粉. 紅糖.奶油混在一起. 有一塊一塊的沒關係
  2. 將桃子一片一片的排在烤盤上. 灑上香草精
  3. 把部奏一倒在桃子上
  4. 烤180度約20分鐘. 就好了

很香. 很有味道的桃子.
小心燙歐…

Cinnamon Roll 肉桂卷 ($4.45 for 12 rolls)

Dough

  • 1 cup of water (80°F) ( $o.1)
  • 1 egg ($0.25)
  • 1/4 cup of butter, softened ($ o.5)
  • 3 1/2 cups of all purpose flour ( $ 1)
  • 1 tsp salt ($0.1)
  • 1/3 cup sugar ($ o.5)
  • 1 1/2 tsp quick active dry yeast ($ 1)

Filling

  • 1 cup of brown sugar ( $0.5)
  • 2 tbsp of ground cinnamon ($0.5)

Total $4.45 make prox. 12 rolls

  1. Measure all dough ingredients carefully, and mix everything together. Place the dough in a warm place for an hour or until the dough is doubled.
  2. Roll the dough flat and sprinkle brown sugar and cinnamon evenly on the dough.
  3. Roll up the dough and cut it into pieces.
  4. Bake at 350°F for 35 minutes.

麵團

  • 1 杯水 (30度左右)
  • 1顆蛋
  • 1/4 杯融奶油
  • 3 1/2 杯麵粉
  • 1 匙鹽
  • 1/3 杯糖
  • 1 1/2 匙酵母粉

填料

  • 1 杯紅糖
  • 2 大匙肉桂粉
  1. 將所有的麵團材料混合好. 放在溫暖處. 等約1小時. 或等到兩倍大
  2. 將麵團桿平. 然後把填料材料灑在麵團上
  3. 將麵團捲起來. 然後切一塊一塊
  4. 烤 180度. 約25-35分鐘

Strawberry butter 草莓抹醬

I made a lot of strawberry related products.
Above, there are two kinds of strawberry butters.
The slightly darker one is Brown sugar strawberry butter.

  • 5 cups of dark brown sugar
  • 3 cups of crushed strawberries
  • 2 bags of Gelatin
  1. cook the strawberries on the stove until boiling. Stir constantly.
  2. slowly add sugar and gelatin.
  3. cook until slightly thickened.

The bright red one is Cinnamon strawberry butter.

  • 5 cups of sugar

我做了草莓抹醬. 是草莓抹醬的原因是因為我都不把果汁過濾掉.
只要把果汁過濾了. 只留水果. 來做果醬. 就變果醬了.

比較深色的是紅糖草莓果醬

  • 5杯紅糖
  • 3杯草莓 (打碎)
  • 2包洋菜
  1. 將草莓放入鍋中煮. 要一直攪動. 直到煮開
  2. 慢慢加入糖及洋菜
  3. 一直煮. 直到變厚. 濃酬

大紅色的是肉桂草莓果醬

  • 5杯糖
  • 3杯草莓 (打碎)
  • 2包洋菜
  • 2大匙肉桂粉
  1. 將草莓放入鍋中煮. 要一直攪動. 直到開
  2. 慢慢加入糖.洋菜
  3. 一直煮. 直到變厚. 濃酬. 然後加入肉桂
