Stir fried flat rice noodles 炒合粉


At many Asian restaurants you can find these big flat rice noodle dishes. They are quite delicious. Here is my version of it.

Ingredients: Flat rice noodles cut into cubes (often you can find them in the refrigerated section of an Asian grocery store.) bacons, scallops, celery ,eggs, salt, pepper, 2 cups chicken broth, chopped garlic, oil, hot sauce (optional)

1. In a hot pan with a little oil, add garlic until fragrant.
2. Add meat
3. When the meat is cooked, add eggs.
4. When eggs are cooked add vegetables.
3. When the vegetables are cooked, add rice noodle and chicken broth.
4. Cover with lid, cook until noodles soften (Usually cooked in about 10 min, in medium heat). Stir often.
5. Add salt and pepper as needed. Hot sauce may be added at this time as well. Savor the broad noodle goodness!

食材: 合粉. 蛋. 任何肉或培根. 任何青菜. 2杯雞湯.鹽.糊椒. 油.蒜.
1. 蒜在油鍋中爆香.加入肉快炒
2. 蛋打散.加入鍋中.熟後.加所有青菜一起炒
3. 加入合粉及雞湯.加蓋.悶煮 10分. 中火.按時攪拌一下
4. 合粉軟後. 如需要.加 鹽.糊椒 或辣椒醬…起鍋.吃吧!

Hot Pot (shabu shabu)

It’s almost Chinese new year! So I decided to share a simple recipe that’s great any time of the year, but especially for this very special occasion. This interactive soup can be prepared in thousands (millions) of different ways, and it is a great way to combine all those random ingredients in your fridge. Here’s is mine from the other night.

Ingredients for hotpot: pork or chicken broth (pork is better), Chinese cabbage, soybean sprouts, one egg, tofu, thinly sliced meat (raw), mushrooms, baby corn, green bean noodles (you can use any kind of noodle really), daikon (sort of like a turnip), scallops, chinese dumplings …etc. If you think it would be good in a soup, it probably would be. You will need a hot plate or an electric wok, or something that allows you to cook at the table.

Dipping sauce: Chinese BBQ sauce (沙茶醬), soysauce, scallions, sesame oil, egg yolk (raw and optional for the squeamish)

1. Bring a pot of chicken broth to a boil. Add daikon and mushrooms; cook until the diakon softens.
2. Mix above ingredients into a dipping sauce. It is easier if everyone has a little dipping dish.
3. Move the soup to the table. Strategically position all the other raw ingredients within reach. Treat like you would any common fondue – dip the other ingredients into the boiling pot and remove when cooked. Dip the cooked ingredients into the sauce and be prepared to loosen your belt.

For added entertainment, see who can pick up the boiled tofu first with chop sticks. Keep in mind, this should be a communal dish that everyone sits around and eats.

You can have this with rice if you want, but many people think it just gets in the way of the good stuff.

Tasty seafood pasta 海鮮義大利麵

Bacon wrapped scallop is a simple idea, but it’s always so delicious. I gave it a shot, it tastes great. I hope you try it as well sometime!

Ingredients: Linguine, 4-8 big sea scallops, 4-8 strips of bacon, some chopped garlic, white wine or chicken broth, cilantro, salt and pepper, oil.

1. Cook Linguine according to package direction.
2. Preheat a pan with some oil.
3. Salt and pepper scallops, and wrap bacon strip around it.
4. Put scallops face down in the pan, so the bacon is touching it. Cook about 5 minutes then turn to another side, until all of the bacon is golden brown. Remove the scallops to a warm plate.
5. Using the same pan, add more oil and garlic. When the garlic becomes fragrant, add white wine or chicken broth. Stimmer for at least 10 minutes.
6. Add cooked pasta into the pan. Add salt and pepper as needed.
7. Plate the pasta and scallops as beautifully as possible. Use cilantro as desired. Eat.

食材: 義大利麵.干貝4-8 顆.培根4-8條.蒜頭.油.黑糊椒.鹽.白酒或雞湯.香菜

1. 依照義大利麵包裝指示.煮軟義大利麵
2. 另一平底鍋中.加油遇熱
3.干貝灑鹽及糊椒. 用培根將干貝繞一圈
4.由培根連接處朝下.放進平底鍋中.煎至培根金黃再翻動.培根四面都完全金黃.盛致盤子中
5.用同一個平底鍋.加油.加蒜頭爆香. 加白酒或雞湯.煮最少10分中
6.把煮好的義大利麵.倒進平底鍋中.拌勻.加鹽及糊椒.
7.先成義大利麵.在把培根包干貝放在上面.如喜歡灑些香菜
